What to do with Cacao Nibs? Part 9 Grain Free Granola with Nibs
It’s really easy to find great granolas out there. But the good ones are often ridiculous expensive and include lots of sugar. That’s why I like to make my own grain free granola now and then. I can adjust the amount of sugar I like and choose my favorite seeds and nuts.
Enjoy with yogurt, milk or milk alternatives, and highly recommended: straight out of the jar.
What you need to make my granola:
- 2 cups or 200g coconut flakes 
- 1 cup or 100g almond meal 
- 1 cup or 100g sun flower seeds 
- 1/2 cup or 50g pumpkin seeds 
- 1/2 cup or 50g chopped pecan 
- 1 cup or 100g chia seeds 
- 1 cup or 100g cacao nibs 
- 1 tablespoon syrup (I used a Trivia syrup, but feel free to use maple syrup or honey) 
- 4 tablespoons of almond butter (also very yummy with peanut butter!) 
How to make granola:
- Add all ingredients into a large bowl 
- Either you mix it with a whisk or by hand 
- Spread whole mix on a tray 
- Bake for 15 min at 250°F/125°C 
- Turn granola over 
- Repeat 4 times total 
- Allow to cool down 
- Store in an airtight container or jar for 1-2 weeks
