Energy Bites - Make your own snack for your hike!
Because I love the outdoors, I want to make my own little Energy Bites to take with me on a hike.
My husband recommended a recipe of Follow Bigfoot, a Hiking YouTube Channel. Said and done. 
I made a vegan version out of it, but of course you can replace the syrup with honey and the pea protein powder with whey protein.
Here’s what you’ll need:
- 1 cup nut butter (almond, peanut.. what every you like best) 
- 1/2 cup syrup (rice and stevia syrup will work or honey) 
- 2 tablespoons coconut oil 
- 1/2 cup almond milk 
- 1/2 cup cacao nibs 
- 1/2 cup nuts (peanuts, almonds, pecan) 
- 1/2 cup berries or dried fruit (plum, apricot or blueberries) 
- 1 1/2 cup chopped dark chocolate 
- 1/2 cup oats 
- 1/2 flax seed meal 
- 1 cup protein powder (pea or whey) 
- 1 teaspoon salt 
How you make my Energy Bites
- Mix nut butter and syrup in a bowl 
- Add all other ingredients besides 1/2 cup dark chocolate and salt 
- Mix well by hand 
- If it’s too dry: add more coconut oil and almond milk 
- If it’s too wet: add more protein powder 
- Scoop balls 
- Melt the remaining 1/2 cup dark chocolate and sprinkle over bites and add salt on top
