Vegan Salty Caramel with Candied Pecan

We start making a caramel, then a classic ganache, followed by caramelizing pecans.The whole recipe is dairy free, but obviously if you want to use cream or butter go for it. You can replace dairy options with the coconut cream or vegan butter in this recipe.

Caramelized pecan

Ingredients

  • 30 g or 1/4 cups raw pecans

  • 25 g or 1/8 cup sugar

  • 1 teaspoon glucose syrup 

  • salt

Instruction

1. Add pecan, sugar and glucose syrup into pan and simmer until golden brown color

2. Let cool down

Caramel

Ingredients

  • 7 large medjool dates, pitted

  • 30 ml or 1/8 cup coconut cream

  • 1/4 tsp sea salt

Instruction 

1. Blend dates, coconut cream and salt in a food processor or blender until smooth

Ganache

Ingredients 

  • 90 g or 1/2 cup chocolate

  • 40 ml or 1/4 cup coconut cream 

  • 1 tablespoon vegan butter/coconut oil 

Instruction

  1. Chop chocolate 

  2. Place butter into bowl with chocolate

  3. Heat up cream until simmering

  4. Pour hot cream over chocolate and butter in 2-3 steps

  5. Stir well with spatula

  6. Blend with immersion blender
