Shelf Stable Strawberry Filling

This is an absolute incomplete recipe for a delicious, fruity filling with 4–6+ weeks shelf life at room temperature (months if stored in the fridge). No purées, no cream, just rich, delicious strawberry flavor using freeze-dried fruit.

Ingredients (for 20–24 bonbons)

  • 20 g or 3 tablespoons freeze-dried strawberry powder

  • 10 g or 1 tablespoon milk powder (you can also use oat milk powder or coconut milk powder)

  • 130 g or 3/4 cup white chocolate 

  • 25 g or 2 tablespoons cocoa butter

  • Pinch of salt

Instruction

  1. Melt chocolate, cacao butter

  2. Blend in strawberry powder, milk powder and salt

  3. Blend with immersion blender
