Oolong Ganache with Crunchy Suprise

I haven’t made an infused ganache in a very long time and thought it’s the perfect time to try out an oolong tea infused ganache with crunchy caramelized cornflakes. 

Caramelized cornflakes

Ingredients

  • 50 g or 2 cups cornflakes (the unsweetened ones)

  • 100 g or 1/2 cup sugar 

  • 1 teaspoon glucose syrup

  • 39 g or 3 tablespoon butter (or butter alternative)

Instruction

  1. Toast cornflakes in non sticky pan

  2. Set aside

  3. In another pot add sugar and glucose syrup 

  4. Caramelize

  5. Add butter

  6. Add crunchy cornflakes to hot caramelize mix

  7. Mix well

Oolong Ganache

Ingredients

130 g or 3/4 cup cream (or cream alternative)

15 g or 1 tablespoon glucose syrup

8 g or 1 tablespoon Oolong tea leaves

100 g or 1/2 cup chocolate

20 g or 1.5 tablespoons butter (or butter alternative)

Instruction

  1. Bring cream to boil

  2. Set aside and infuse tea leaves for 30 min

  3. Strain

  4. Add glucose syrup and boil again

  5. Pour over chocolate in 2-3 steps

  6. Add butter 

  7. Immersion blend
