What to do with Cacao Nibs? Part 3 Brownies with Nibs

This is a vegan recipe for brownies. Eggs, butter and milk are substituted with plant based products like sweet potatoes and almond milk. If you have nut allergies, I’d suggest to add nibs on top instead of walnuts or pecans. Those brownies are super moist and go perfect with coffee, tea and hot chocolate (no, you can NEVER have enough chocolate in your life :))

What you need to make my brownies: 

  • 1/2 cup or 120ml almond milk (you can also use regular milk)

  • 1 1/2 cup or 450g sweet potatoes

  • 1/2 cup or 64g rice flour (you can also just use almond flour or regular flour)

  • 2/3 cup or 85g almond meal

  • 1/2 cup or 64g coconut sugar

  • 5 tablespoons nibs

  • 1/3 cup or 43g tahini

  • 1/2 cup or 90g melted dark chocolate

  • add some pecans or walnuts for extra crunch on top 

How to make brownies:

  • Peel, cut and cook sweet potatoes

  • Add sweet potatoes, almond milk, rice flour, almond meal, coconut sugar, nibs, tahini and melted dark chocolate into a bowl and mix till everything is combined

  • Grease a baking dish

  • Pour dough into baking dish and sprinkle nibs and nuts on top

  • Bake for 25-30min at 350F or 175C 

Awesome for breakfast or as a snack in between.
